A friend of mine sent me this website featuring some very creative people with their Top Ten Responses to Junk Mail.

These include portraits, custom blinds, sculpture, mulch (defintely avoid colored gloss paper that contains lead), furniture and politically incorrect mailboxes. The website includes a comparison chart of different web services to stop or reduce the flow of junk mail/catalogs, and they promise not to sell your private information.

If you're not feeling arty today, the Office of Creative Influence has some suggestions on how to get rid of the junk mail you already have lying around the house.
